Grilled Peach & Burrata Salad

Summer just got a whole lot sweeter with this vibrant Sweet & Savory Grilled Peach & Burrata Salad! Bursting with juicy grilled peaches, creamy burrata, and a mix of fresh greens, this dish is perfect for any occasion. Ingredients
  

2 ripe peaches, halved and pitted

8 oz fresh burrata cheese

4 cups mixed greens (arugula, spinach, and watercress)

½ cup balsamic glaze

¼ cup extra virgin olive oil

¼ cup toasted pine nuts

Fresh basil leaves, for garnish

Sea salt and freshly cracked black pepper, to taste

Instructions
 

Prepare the Grill: Preheat your grill to medium heat. If using a grill pan, place it on medium heat on the stove.

    Grill the Peaches: Lightly brush the cut sides of the halved peaches with a little olive oil. Place them cut side down on the grill. Grill for about 4-5 minutes until grill marks appear and the peaches are softened. Remove from the grill and let them cool slightly.

      Prepare the Greens: In a large mixing bowl, toss the mixed greens with olive oil, a sprinkle of sea salt, and freshly cracked black pepper, until evenly coated.

        Assemble the Salad: On a large serving platter or individual plates, arrange the dressed greens as a bed. Tear the burrata into pieces and scatter over the greens.

          Add Grilled Peaches: Cut the grilled peaches into wedges and place them over the salad.

            Drizzle with Balsamic: Generously drizzle balsamic glaze over the burlata, peaches, and greens.

              Finish with Pine Nuts and Basil: Sprinkle toasted pine nuts over the top and garnish with fresh basil leaves for an aromatic touch.

                Serve & Enjoy: Serve immediately while the peaches are warm, and enjoy the burst of flavors!
