Grilled Peach Blueberry Salad

Ingredients
  

4 ripe peaches, halved and pitted

2 cups fresh blueberries

1 cup baby arugula or mixed greens

1/4 cup crumbled feta cheese

1/4 cup walnuts, toasted and roughly chopped

2 tablespoons honey

2 tablespoons balsamic vinegar

3 tablespoons extra virgin olive oil

Salt and black pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Grill: Preheat your grill to medium heat. If you’re using a grill pan, preheat it on the stovetop.

    Grill the Peaches: Lightly brush the cut sides of the peach halves with olive oil. Place them cut-side down on the grill. Grill for about 4-5 minutes until they have nice grill marks and begin to soften. Remove from the grill and let them cool slightly before slicing them into wedges.

      Make the Dressing: In a small bowl, whisk together the honey, balsamic vinegar, and remaining olive oil. Season with salt and black pepper to taste.

        Assemble the Salad: In a large salad bowl, combine the arugula and blueberries. Add the grilled peach wedges and sprinkle the crumbled feta cheese and toasted walnuts on top.
