Grilled Corn and Avocado Salsa

4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 jalapeño, seeded and minced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tbsp olive oil

1 tsp smoked paprika

Salt and pepper to taste

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates. Grill for about 10-15 minutes, turning occasionally until the corn is charred and tender. Remove from the grill and let cool slightly.

    Cut the Kernels: Once the corn is cool enough to handle, use a sharp knife to cut the kernels off the cobs into a large mixing bowl.

      Mix the Salsa: Add the diced avocados, chopped red onion, minced jalapeño, cherry tomatoes, and chopped cilantro to the bowl with the corn.

        Season: In a small bowl, whisk together lime juice, olive oil, smoked paprika, salt, and pepper. Drizzle the dressing over the corn and avocado mixture. Gently fold everything together until well combined.

          Taste and Adjust: Taste the salsa and adjust the seasoning, adding more salt, pepper, or lime juice as needed.
