Ingredients

2 chicken breasts

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

½ teaspoon chili powder

Salt and pepper, to taste

1 tablespoon olive oil

4 flour tortillas (10-inch)

2 cups shredded Monterey Jack cheese

1 cup corn (fresh or canned)

1 cup diced bell peppers (any color)

½ cup chopped fresh cilantro

Salsa and sour cream, for serving

Instructions

Marinate the Chicken: In a mixing bowl, combine the smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Rub the mixture onto the chicken breasts. Drizzle with olive oil and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked through and the internal temperature reaches 165°F (75°C). Let it rest for 5 minutes before slicing it thinly.

Prepare the Quesadilla Filling: In a large bowl, combine the sliced grilled chicken, corn, diced bell peppers, and chopped cilantro. Toss everything together until well mixed.

Assemble the Quesadillas: Heat a non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle half of it with a generous amount of Monterey Jack cheese. Top with a ladle of the chicken and vegetable mixture, followed by another sprinkle of cheese. Fold the tortilla in half.

Cook the Quesadillas: Cook for about 3-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is melted. Repeat with the remaining tortillas and filling.

Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges. Serve hot with salsa and sour cream on the side. Enjoy your delicious Smoky Grilled Chicken Quesadillas!
