Grilled Chicken & Peach Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

½ cup barbecue sauce (store-bought or homemade)

2 tablespoons olive oil

1 tablespoon fresh lime juice

2 teaspoons smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the cut chicken pieces, barbecue sauce, olive oil, lime juice, smoked paprika, garlic powder, salt, and pepper. Mix until the chicken is well coated. Cover and refrigerate for at least 30 minutes to let the flavors meld.

    Prepare the Skewers: Preheat your grill to medium-high heat. While the grill heats up, thread the marinated chicken, peach wedges, bell pepper pieces, and red onion onto the skewers, alternating between each ingredient for a colorful presentation.

      Grill the Skewers: Once the grill is ready, place the skewers on the grill grates. Cook for about 8-10 minutes, turning occasionally, until the chicken is fully cooked (internal temperature should reach 165°F or 75°C) and has nice grill marks. The peaches should also get slightly caramelized.

        Serve: Carefully remove the skewers from the grill and let them rest for a couple of minutes. Serve hot, drizzling extra barbecue sauce if desired, alongside a fresh side salad or grilled corn.

          Add a Garnish (optional): For an extra pop of flavor, you can sprinkle fresh chopped cilantro or parsley on top before serving.
