Grilled Chicken Greek Pasta Salad

2 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lemon

For the Pasta Salad:

8 oz rotini or penne pasta

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

For the Greek Dressing:

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 teaspoon honey

1 teaspoon dried oregano

Salt and pepper to taste

Marinate the Chicken: In a bowl, mix olive oil, oregano, garlic powder, salt, pepper, and lemon juice. Add the chicken breasts, ensuring they are well coated. Marinate for at least 30 minutes, or up to 2 hours for extra flavor.

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

      Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove chicken from marinade and place it on the grill. Cook for about 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes before slicing into strips.

        Prepare the Salad: In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.

          Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, oregano, salt, and pepper until well blended.
