Grilled Chicken & Corn Caesar Salad

Ingredients
  

2 boneless, skinless chicken breasts

2 cups fresh romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen, thawed)

1/2 cup Parmesan cheese, shaved

1/4 cup Caesar dressing

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Croutons, for garnish (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a small bowl, mix olive oil, garlic powder, salt, and pepper. Rub the mixture onto the chicken breasts. Let them marinate in the refrigerator for at least 30 minutes to enhance the flavors.

    Preheat the Grill: Prepare your grill for medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

      Grill the Chicken: Once the grill is hot, place the marinated chicken breasts on it. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from the grill and let it rest for 5 minutes.

        Prepare the Corn: If using fresh corn, grill the ears of corn for about 5-6 minutes until slightly charred. If using frozen corn, you can sauté it in a pan over medium heat for 3-4 minutes until heated through.

          Assemble the Salad: In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, grilled corn, and shaved Parmesan cheese.

            Slice the Chicken: After the grilled chicken has rested, slice it into strips. Place the chicken strips on top of the salad mixture.

              Dress the Salad: Drizzle Caesar dressing over the salad and toss gently to coat everything evenly.
