Ingredients

For the Cornbread Muffins:

1 cup all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1/4 cup sugar

1 large egg

1/4 cup melted butter

1 cup diced green chilies (canned or fresh, roasted)

1 cup shredded sharp cheddar cheese

For the Sliders:

1 lb ground beef or turkey

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded lettuce

1/2 cup diced tomatoes

Your favorite burger sauce or spicy mayo

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a muffin tin by greasing it or lining with paper liners.

Make the Cornbread Batter: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, sugar, egg, and melted butter. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Fold in the diced green chilies and shredded cheddar cheese.

Bake the Muffins: Divide the cornbread batter evenly among the muffin cups, filling each about 2/3 full. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for a few minutes before transferring them to a wire rack.

Prepare the Slider Patties: While the muffins are baking, in a mixing bowl, combine the ground meat with garlic powder, onion powder, smoked paprika, salt, and pepper. Shape mixture into small patties that will fit the size of your cornbread muffins.

Cook the Patties: Preheat a skillet or grill over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired level of doneness.

Assemble the Sliders: Once the muffins and patties are cooked, slice the cornbread muffins in half. On the bottom half, layer the slider patty, shredded lettuce, diced tomatoes, and drizzle with your favorite burger sauce or spicy mayo. Top with the other half of the muffin.

Serve: Arrange the sliders on a platter and serve warm. Enjoy the blend of flavors with the zesty corn muffins!
