Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup cooked bacon, crumbled

1/2 cup roasted green chiles, diced (fresh or canned)

1/2 cup buttermilk

1 large egg (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cut in Butter: Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese, Bacon, and Green Chiles: Stir in the shredded cheddar cheese, crumbled bacon, and diced green chiles until evenly distributed throughout the flour mixture.

Incorporate Wet Ingredients: Pour in the buttermilk and stir gently until just combined. Be careful not to overmix; the dough should be slightly sticky but manageable.

Shape the Biscuits: Turn the dough onto a floured surface and gently knead it a few times to bring it together. Pat it into a rectangle about 1-inch thick. Use a biscuit cutter or a floured glass to cut out biscuits and place them on the prepared baking sheet.

Brush with Egg Wash: In a small bowl, beat the egg and brush it over the tops of the biscuits for a golden finish.

Bake: Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown and cooked through.

Cool & Serve: Remove the biscuits from the oven and let them cool slightly on the baking sheet before serving. Enjoy warm!
