1 pound fresh green beans, trimmed and halved

1 cup sliced mushrooms (button or cremini)

1 small onion, diced

2 cloves garlic, minced

1 cup sour cream

1 cup vegetable broth

1 teaspoon soy sauce

1 teaspoon Worcestershire sauce

2 teaspoons Dijon mustard

1 cup crispy fried onions (divided)

1 teaspoon dried thyme

1 teaspoon black pepper

Salt to taste

1 cup shredded cheddar cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the fresh green beans and blanch for about 4-5 minutes until bright green and slightly tender. Drain and transfer them immediately to a bowl of ice water to stop the cooking process.

      Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Once hot, toss in the diced onion and sauté for about 3-4 minutes until translucent. Add the sliced mushrooms and minced garlic, cooking for another 3-4 minutes until the mushrooms are tender.

        Make the Creamy Sauce: In a mixing bowl, combine the sour cream, vegetable broth, soy sauce, Worcestershire sauce, Dijon mustard, dried thyme, black pepper, and salt. Stir until well combined.

          Combine Ingredients: In a large mixing bowl, combine the blanched green beans, sautéed vegetables, and the creamy sauce. If you're using cheddar cheese, fold it in at this stage.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish.

              Add Crunchy Topping: Sprinkle half of the crispy fried onions over the green bean mixture. Reserve the other half for later.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, until it’s bubbly and heated through.

                  Add Final Topping: In the last 5-10 minutes of baking, remove the casserole from the oven and sprinkle the remaining crispy fried onions on top. Return to the oven and bake until the onions are golden brown.

                    Serve: Let the casserole sit for 5-10 minutes before serving. This will help it set a bit. Serve warm and enjoy this delightful twist on a classic dish!
