1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

1 large egg

2 tablespoons olive oil (for frying)

For the Lemon Orzo:

1 cup orzo pasta

2 cups chicken broth (low-sodium)

Zest of 1 lemon

Juice of 1 lemon

1 tablespoon olive oil

Salt and pepper, to taste

Fresh dill or parsley, for garnish (optional)

Instructions
 

Prepare the Meatball Mix:

    - In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, cumin, salt, pepper, and egg.

      - Mix until well combined but be careful not to overwork the meat.
