Golden Mac and Cheese-Stuffed Peppers

4 large bell peppers (any color)

2 cups elbow macaroni

3 cups sharp cheddar cheese, shredded

1 cup cream cheese, softened

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

Salt and pepper, to taste

1/2 cup breadcrumbs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Bell Peppers:

    Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

      Cook the Macaroni:

        In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

          Make the Cheese Sauce:

            In a large saucepan over medium heat, combine the cream cheese and milk. Stir until smooth and creamy. Gradually add in 2 cups of shredded cheddar cheese while stirring continuously until melted.

              Combine Macaroni and Cheese Sauce:

                Once the cheese sauce is ready, add the cooked macaroni, garlic powder, onion powder, paprika, salt, and pepper. Stir until the pasta is fully coated with the cheese sauce.

                  Stuff the Peppers:

                    Carefully spoon the mac and cheese mixture into each bell pepper, packing it down gently to fit as much filling as possible.

                      Prepare the Topping:

                        In a small bowl, mix the remaining 1 cup of shredded cheddar cheese and breadcrumbs. Drizzle olive oil over the mixture and stir until well combined.

                          Top and Bake:

                            Sprinkle the breadcrumb and cheese topping evenly over the stuffed peppers. Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the tops are golden brown and crispy.

                              Garnish and Serve:

                                Remove from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving.
