For the Crust:

1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup unsalted butter, softened

1/4 teaspoon salt

For the Lemon Filling:

1 cup granulated sugar

2 large eggs

1/4 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1/4 cup all-purpose flour

1/2 teaspoon baking powder

For the Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lemon juice

Zest of 1 lemon (for garnish, optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine 1 cup of flour, 1/4 cup of powdered sugar, and 1/4 teaspoon salt.

        - Cut in 1/2 cup softened butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

          - Press the mixture firmly into the bottom of a greased 8x8 inch baking pan. Bake for 15 minutes or until lightly golden.

            Make the Lemon Filling:

              - In a mixing bowl, whisk together 1 cup granulated sugar and 2 large eggs until well combined.

                - Add in 1/4 cup fresh lemon juice and the zest of 1 lemon, mixing thoroughly.

                  - Sift in 1/4 cup flour and 1/2 teaspoon baking powder, and stir until just combined. Do not overmix.

                    Bake:

                      - Pour the lemon filling over the pre-baked crust while it’s still warm. Bake in the oven for an additional 20-25 minutes, or until the filling is set but still slightly jiggly in the middle.

                        Cool:

                          - Once baked, remove from the oven and allow to cool in the pan on a wire rack.

                            Prepare the Glaze:

                              - In a small bowl, combine 1 cup powdered sugar with 2 tablespoons of fresh lemon juice. Adjust the consistency with additional lemon juice as needed until smooth and pourable.

                                Glaze the Bars:

                                  - Once the lemon squares have completely cooled, drizzle the glaze over the top using a spoon or a piping bag for more control.

                                      Serve:
