Garlic Parmesan Hasselback Potatoes

4 medium-sized russet potatoes

4 cloves garlic, minced

1/2 cup unsalted butter, melted

1/2 cup grated Parmesan cheese

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Extra Parmesan cheese (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry, and place each potato on a cutting board. To make the Hasselback cuts, place a wooden spoon or chopstick on either side of each potato to prevent cutting all the way through. Slice the potatoes into thin slices, about 1/8 inch apart, but stop about 1/4 inch from the bottom so that the potato stays intact.

      Make the Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, chopped rosemary, salt, and black pepper. Mix well.

        Coat the Potatoes: Place the sliced potatoes on the prepared baking sheet. Use a brush or a spoon to carefully drizzle or brush the garlic butter mixture over each potato, ensuring some gets in between the slices.

          Roasting: Roast the potatoes in the preheated oven for 45-50 minutes. Halfway through, drizzle the potatoes with olive oil and sprinkle the grated Parmesan cheese on top, letting it melt into all the nooks and crannies.

            Final Touches: Once the potatoes are golden and crispy, remove them from the oven, and give them a final sprinkle of parsley and additional Parmesan cheese if desired.

              Serve: Let the potatoes cool for a few minutes before serving. Pair them with your favorite dipping sauce or just enjoy them as they are!
