Garlic Lime Shrimp Lettuce Wraps

1 lb (450g) large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 limes

1 teaspoon chili powder

Salt and pepper to taste

1 head of butter lettuce or iceberg lettuce, leaves separated

1 cup shredded carrots

1 cup diced cucumbers

½ cup cilantro leaves, chopped

½ avocado, diced

Lime wedges, for serving

Instructions
 

Prepare the Shrimp: In a medium bowl, combine the shrimp, minced garlic, olive oil, lime juice and zest, chili powder, salt, and pepper. Mix well to ensure all shrimp are evenly coated. Allow to marinate for 15-20 minutes while you prepare other ingredients.

    Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side until pink and cooked through. Remove from heat and set aside.

      Prepare the Lettuce Wraps: While the shrimp are cooking, wash and dry the lettuce leaves gently. Arrange them on a serving platter.

        Assemble the Wraps: In each lettuce leaf, add a few pieces of shrimp, followed by a sprinkle of shredded carrots, diced cucumbers, cilantro leaves, and avocado.
