Garlic Lemon Chickpea Wraps

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup diced cucumbers

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1 cup fresh spinach or mixed greens

4 large whole wheat or spinach wraps

Optional: 1/4 cup tahini or hummus for spreading

Instructions
 

In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add the drained chickpeas to the skillet, then stir in the lemon zest, lemon juice, ground cumin, smoked paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chickpeas are warmed through and slightly crisped.

      While the chickpeas cook, prepare the vegetables: dice the cucumbers, halve the cherry tomatoes, and thinly slice the red onion.

        Once the chickpeas are ready, remove them from heat and let them cool slightly.

          On each wrap, spread a layer of tahini or hummus (if using) for added creaminess.

            Layer on a handful of fresh spinach or mixed greens, followed by the cooked chickpeas, diced cucumbers, cherry tomatoes, and red onion.

              Roll up the wraps tightly, tucking in the sides as you go to prevent filling from falling out. Slice in half and serve immediately, or wrap in foil for an on-the-go meal.
