Garlic Lemon Broccoli Pasta

Ingredients
  

8 oz (225 g) spaghetti or your choice of pasta

2 cups broccoli florets

4 tablespoons olive oil

3-4 cloves garlic, minced

Zest of 1 large lemon

Juice of 1 large lemon

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (plus more for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. In the last 3-4 minutes of cooking, add the broccoli florets to the pot.

      Drain and Reserve:

        - When the pasta is done, reserve about 1/2 cup of the pasta water, then drain the pasta and broccoli. Set aside.

          Sauté Garlic:

            - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes or until the garlic is fragrant but not browned.

              Combine Pasta and Broccoli:

                - Add the drained pasta and broccoli to the skillet with the garlic. Toss to combine, ensuring the pasta and broccoli are fully coated with the garlic-oil mixture.

                  Add Lemon:

                    - Stir in the lemon zest, lemon juice, and half of the reserved pasta water. Mix well. If the pasta looks dry, gradually add more of the reserved pasta water until you achieve your desired consistency.

                      Season and Serve:

                        - Season generously with salt and pepper to taste. Add the grated Parmesan cheese and toss until everything is well combined.

                          Garnish:

                            - Serve the pasta hot, garnished with fresh parsley and additional Parmesan cheese if desired.
