Ingredients

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

6 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/4 cup olive oil

4 tablespoons unsalted butter

1/2 cup white wine (dry, like Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

Salt and pepper to taste

1/4 cup fresh parsley, chopped

2 tablespoons fresh basil, chopped

Grated Parmesan cheese for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté the Shrimp: In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Add Shrimp to Skillet: Toss the shrimp into the skillet. Cook for 2-3 minutes on one side, then flip and cook for another 1-2 minutes until they turn pink and opaque. Season with salt and pepper to taste. Remove the shrimp from the skillet and set aside.

Make the Sauce: In the same skillet, add the white wine and scrape the bottom of the pan to deglaze it. Bring it to a simmer and let it reduce slightly for about 2-3 minutes.

Combine Ingredients: Add the lemon juice and zest to the skillet. Return the shrimp to the pan, and stir in the remaining butter. Allow everything to simmer together for an additional minute.

Toss in Pasta: Add the drained pasta to the skillet and toss well to combine. If the mixture seems dry, gradually add some reserved pasta water until desired consistency is reached.

Finish with Herbs: Stir in the chopped parsley and basil. Taste and adjust seasoning as necessary with additional salt, pepper, or lemon juice.

Serve: Serve the pasta hot, topped with grated Parmesan cheese and extra herbs if desired. Enjoy your delicious Garlic Herb Shrimp Scampi Pasta!
