4 ears of fresh sweet corn, husked

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon sea salt

½ teaspoon black pepper

2 tablespoons fresh cilantro, chopped

1 tablespoon fresh lime juice

8 small corn tortillas

1 cup diced avocado

1 cup crumbled feta cheese (optional)

Prepare the Corn: Preheat your oven to 400°F (200°C). Husk the corn and remove all silk.

    Roast the Corn: In a large bowl, combine the olive oil, minced garlic, smoked paprika, cumin, sea salt, and black pepper. Brush this mixture over each ear of corn, ensuring they are well coated.

      Bake: Place the corn on a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes, turning halfway through, until the corn is tender and starts to caramelize.

        Cut the Kernels: Once the corn is cool enough to handle, carefully slice off the kernels from the cob and place them in a mixing bowl.
