Ingredients

1 pound (450g) fresh cremini or button mushrooms, cleaned and stems trimmed

4 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

2 teaspoons fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon balsamic vinegar (optional)

Fresh parsley, chopped for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will ensure that the mushrooms roast beautifully, developing a lovely caramelization.

Prepare the Mushrooms: In a large mixing bowl, add the cleaned mushrooms. If they are large, you can halve or quarter them to ensure even cooking.

Make the Herb Mixture: In a separate bowl, whisk together the olive oil, minced garlic, thyme, rosemary, salt, and black pepper. If you choose to add balsamic vinegar for an extra flavor kick, include it here.

Combine Ingredients: Pour the herb mixture over the mushrooms and toss them gently until they are well-coated. Ensure each mushroom is evenly seasoned with the garlicky goodness.

Spread on a Baking Sheet: Line a large baking sheet with parchment paper or lightly grease it. Spread the seasoned mushrooms in a single layer. This will help them roast evenly and attain a nice golden color.

Roast the Mushrooms: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, tossing halfway through to ensure even cooking. The mushrooms should be tender and golden brown by the end.

Garnish and Serve: Once roasted, remove the mushrooms from the oven. Transfer them to a serving bowl, sprinkle with freshly chopped parsley if desired, and serve warm as a side dish or a topping for crusty bread.
