1 medium zucchini, sliced into thick rounds

1 medium yellow squash, sliced into thick rounds

1 red bell pepper, cut into large strips

1 yellow bell pepper, cut into large strips

1 medium red onion, cut into wedges

1 cup cherry tomatoes, whole

4 cloves garlic, minced

1/4 cup olive oil

2 tbsp balsamic vinegar

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley for garnish

Prepare the Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, dried thyme, red pepper flakes, salt, and pepper until well combined.
