Garlic Butter Steak and Potatoes Skillet

1 lb (450g) steak (ribeye, sirloin, or filet mignon)

1 lb (450g) small baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped for garnish

Instructions
 

Prepare the Potatoes: In a medium pot, add the halved baby potatoes and cover with water. Bring to a boil and cook for about 10-15 minutes, or until fork-tender. Drain and let them cool slightly.

    Sear the Steak: While the potatoes are cooking, season both sides of the steak generously with salt and pepper. Heat a large skillet over medium-high heat. Add olive oil. Once the oil is shimmering, place the steak in the hot skillet. Cook for about 4-5 minutes on each side or until it reaches your desired doneness (135°F for medium-rare). Remove the steak from the skillet and let it rest on a cutting board, loosely covered with foil.

      Cook the Potatoes: In the same skillet, add the drained baby potatoes. Sauté for about 5-7 minutes until they are golden brown and crispy. If needed, add an extra tablespoon of olive oil. Make sure to toss them occasionally for even browning.

        Add Garlic and Herbs: Reduce the heat to medium-low. Push the potatoes to the side of the skillet and add the minced garlic, rosemary, and thyme. Cook for 1-2 minutes, stirring frequently until the garlic is fragrant and golden.
