1 pound large shrimp, peeled and deveined

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and fluff with a fork. Set aside.

    Prepare the Shrimp: While the quinoa is cooking, season the shrimp with salt, pepper, and red pepper flakes.

      Sauté Garlic: In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes or until fragrant, but be careful not to burn it.

        Cook the Shrimp: Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Stir in the lemon juice and remove the pan from heat.
