Ingredients

1 lb (450g) fresh mushrooms (cremini, button, or a mix)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon lemon juice (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

Prepare the Mushrooms: Clean the mushrooms gently with a damp paper towel to remove any dirt. If they're large, you can slice them in half or quarters for even cooking.

Make the Garlic Butter Mixture: In a mixing bowl, combine the melted butter, minced garlic, thyme, salt, and black pepper. Stir well until all ingredients are blended.

Toss the Mushrooms: Place the cleaned mushrooms in a large mixing bowl. Pour the garlic butter mixture over the mushrooms and toss them gently until they are well coated.

Arrange on Baking Sheet: Spread the mushrooms in a single layer on a baking sheet lined with parchment paper. This will help with even roasting.

Roast in the Oven: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, or until the mushrooms are golden brown and tender. Toss the mushrooms halfway through the cooking time for even browning.

Finish with Lemon Juice: Once the mushrooms are done roasting, remove them from the oven and drizzle with lemon juice if desired. Toss once more to combine the flavors.

Garnish and Serve: Transfer the roasted mushrooms to a serving dish, sprinkle with fresh parsley, and serve warm. Enjoy the delightful aroma and flavor!
