To achieve a restaurant-quality garlic aioli tuna steak, proper preparation of the tuna is essential. The first step is drying and seasoning the tuna steaks, which greatly influences the final flavor and texture of the dish. Start by patting the tuna steaks dry with paper towels. This step is crucial because excess moisture can hinder the searing process and prevent the development of that coveted crust. Once dried, sprinkle a generous pinch of salt and freshly ground black pepper over both sides. This seasoning not only enhances the natural flavor of the tuna but also helps to create a beautiful crust when cooked.

Ingredients

2 fresh tuna steaks (about 6 ounces each)

1 tablespoon olive oil

Salt and black pepper, to taste

2 tablespoons fresh lemon juice (divided)

1 cup mayonnaise

3 cloves garlic, finely minced

1 teaspoon Dijon mustard

1 teaspoon capers, rinsed and chopped

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Prepare the Aioli:

    - In a small bowl, combine the mayonnaise, minced garlic, Dijon mustard, chopped capers, and 1 tablespoon of lemon juice. Mix well until all ingredients are thoroughly combined. Adjust seasoning with salt and pepper to taste. Set aside.

      Prepare the Tuna Steaks:

        - Pat the tuna steaks dry with paper towels. Rub both sides with olive oil and season generously with salt and black pepper.

          Cook the Tuna:

            - Heat a grill or a cast-iron skillet over medium-high heat. Once hot, place the tuna steaks on the grill or skillet. Sear for about 2-3 minutes on one side, depending on the desired doneness (rare to medium-rare is preferred for tuna). Flip and sear for an additional 2-3 minutes.

              Plate the Dish:

                - Remove the tuna steaks from the heat and let them rest for a minute. Drizzle the remaining lemon juice over the top.

                  Serve:

                    - Slice the tuna steaks against the grain and place them on plates. Generously dollop the garlic aioli on top and garnish with fresh parsley. Serve immediately with an extra wedge of lemon on the side, if desired.
