2 cups Greek yogurt (plain or flavored)

1 teaspoon vanilla extract

2 tablespoons honey or maple syrup

1 cup unsweetened shredded coconut

1/4 cup sliced almonds (optional)

1/4 cup mixed berries (raspberries, blueberries, or sliced strawberries)

Pinch of sea salt

Prepare the Base: In a mixing bowl, combine the Greek yogurt, vanilla extract, and honey (or maple syrup). Mix until well blended and smooth. Adjust sweetness to taste.

    Toast the Coconut: Preheat your oven to 350°F (175°C). Spread the shredded coconut evenly on a baking sheet and toast in the oven for 5-7 minutes, stirring once halfway through, until golden brown and fragrant. Keep an eye on it to prevent burning!

      Create Yogurt Circles: Line another baking sheet with parchment paper. Using a round cookie cutter (or simply a spoon), dollop about 2 tablespoons of the yogurt mixture onto the parchment, creating round shapes. Repeat until all yogurt is used. You should have about 8-10 rounds.

        Add Toppings: While the yogurt is still soft, sprinkle a pinch of sea salt over each round. Gently press some toasted coconut and sliced almonds (if using) onto the tops. Then, finish with a few mixed berries arranged artfully on each round.
