Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well mixed and creamy.

    Form the Coins: Line a baking sheet with parchment paper. Using a cookie cutter or a spoon, drop dollops of the yogurt mixture onto the parchment, shaping them into round coin-like discs. Aim for about 1.5 inches in diameter.

      Add Coconut Topping: Sprinkle a tablespoon of shredded coconut on top of each yogurt coin, gently pressing it down to ensure it sticks.
