1 ½ cups pretzel crumbs

½ cup unsalted butter, melted

3 tablespoons brown sugar

2 cups strawberries, hulled and sliced

2 cups Greek yogurt (vanilla or plain)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

For the topping:

½ cup whipped cream (optional)

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the pretzel crumbs, melted butter, and brown sugar. Mix until fully combined. Press this mixture firmly into the bottom of a 9x9 inch square baking dish. Bake for 10 minutes, then remove and let cool completely.

    Make the filling: In a separate bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice. Stir until smooth. Gently fold in the sliced strawberries until evenly distributed.

      Assemble the squares: Pour the yogurt mixture over the cooled pretzel crust, smoothing it out with a spatula. Ensure an even layer, then cover with plastic wrap and place in the freezer for at least 4 hours, or until firm.
