2 cups fresh strawberries, hulled and halved

1 cup plain Greek yogurt (or your favorite dairy-free alternative)

1/4 cup honey or maple syrup (adjust sweetness to taste)

1/2 cup rolled oats

1/2 teaspoon vanilla extract

A pinch of salt

Optional toppings: shredded coconut, chopped nuts, or granola for garnish

Instructions
 

Prepare the Strawberries: In a blender or food processor, add the hulled strawberries and blend until smooth. You can leave some small chunks if you prefer a more textured pop.

    Mix Ingredients: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), rolled oats, vanilla extract, and salt. Stir well until fully combined.

      Combine: Gently fold the blended strawberries into the yogurt mixture, ensuring that it's mixed evenly but still has a marbled effect with some strawberry swirls visible.

        Pour into Molds: Carefully pour the mixture into ice pop molds, leaving a little space at the top for expansion when freezing. If you like, you can also sprinkle some additional oats or chopped nuts on top before inserting the sticks.

          Freeze: Insert popsicle sticks and place the molds in the freezer. Freeze for at least 4-6 hours or until completely solid.
