1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

1/2 cup canned pumpkin puree

1/4 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons melted coconut oil or unsalted butter

1 teaspoon vanilla extract

For the Frozen Yogurt Filling:

2 cups plain Greek yogurt (or your favorite yogurt)

1/2 cup pumpkin puree

1/4 cup honey or maple syrup

1 teaspoon pumpkin pie spice

1 teaspoon vanilla extract

Pinch of salt

For the Topping:

1/4 cup crushed graham crackers

1 teaspoon pumpkin pie spice

Drizzle of maple syrup (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, baking powder, pumpkin pie spice, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the pumpkin puree, milk, egg, melted coconut oil (or butter), and vanilla extract until smooth.

        Combine Mixtures: Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Don’t overmix; a few lumps are okay.

          Fill Donut Pan: Use a piping bag or a spoon to fill each donut cavity about 2/3 full with batter.

            Bake: Bake in the preheated oven for 8-10 minutes, or until a toothpick inserted into the donut comes out clean. Allow them to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

              Prepare Frozen Yogurt Filling: While the donuts cool, prepare the filling by combining the Greek yogurt, pumpkin puree, honey (or maple syrup), pumpkin pie spice, vanilla extract, and salt in a bowl. Mix until smooth and thoroughly combined.

                Freeze the Filling: Scoop the yogurt mixture into a silicone mold or an ice cube tray. Cover with plastic wrap and freeze until solid, about 4 hours or overnight.

                  Assemble Donuts: Once the donuts and yogurt filling are frozen, remove the frozen yogurt from the molds. Make a small hole in the center of each donut (if needed) using a knife. Press a piece of frozen yogurt into the center of each donut.

                    Topping: In a small bowl, mix the crushed graham crackers with pumpkin pie spice. Sprinkle this mixture on top of the yogurt-filled donuts. Drizzle with maple syrup for added sweetness if desired.
