1 cup unsalted pistachios, shelled and roughly chopped

1 cup Medjool dates, pitted and chopped

1 cup Greek yogurt (plain or vanilla, your choice)

2 tablespoons honey or maple syrup (adjust for sweetness)

1/4 teaspoon sea salt

1/2 cup shredded coconut (unsweetened, optional)

1/4 cup dark chocolate chips, melted (for drizzling, optional)

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Mix well until smooth and creamy.

    Mix in the Pistachios and Dates: Fold in the chopped pistachios and dates into the yogurt mixture. If you're including shredded coconut, add it at this stage as well. Ensure everything is evenly distributed.

      Form the Clusters: Using a tablespoon, scoop out portions of the mixture and place them on a parchment-lined baking sheet. Gently press each cluster down to form a little mound, ensuring they hold their shape when frozen.
