Ingredients

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

2 cups Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

2 large ripe peaches, diced (fresh or frozen)

1 teaspoon vanilla extract

1 teaspoon lemon juice

1/4 teaspoon ground cinnamon (optional)

Fresh mint leaves (for garnish, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand.

Bake the Crust: Press the crumb mixture firmly into the bottom of a greased 9x9-inch baking pan. Bake in the preheated oven for 10 minutes until lightly golden. Remove from the oven and let cool completely.

Prepare the Peach Yogurt Filling: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and ground cinnamon (if using). Whisk until smooth and creamy.

Fold in Peaches: Gently fold the diced peaches into the yogurt mixture until evenly distributed.

Assemble the Bars: Once the crust is completely cooled, pour the peach yogurt filling over the crust. Spread it evenly with a spatula.

Freeze: Cover the baking pan with plastic wrap or aluminum foil and freeze for at least 4-6 hours, or until solid.

Cut into Bars: Once fully frozen, remove the pan from the freezer. Let it sit at room temperature for a few minutes for easier cutting. Cut into 16 bars.

Serve: Garnish with fresh mint leaves if desired. Enjoy your refreshing peachy paradise frozen yogurt pie bars!

Store Leftovers: Store any leftover bars in an airtight container in the freezer for up to 2 weeks.
