2 cups plain Greek yogurt

1/2 cup pure maple syrup

1 teaspoon vanilla extract

1/2 cup chopped walnuts

1/4 teaspoon sea salt

1 tablespoon coconut oil (melted)

1 tablespoon powdered sugar (optional, for sweeter taste)

1/4 teaspoon cinnamon (optional, for flavor enhancement)

Fresh walnut halves for garnish (optional)

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, maple syrup, vanilla extract, sea salt, and if using, the powdered sugar and cinnamon. Stir until the mixture is smooth and well combined.

    Incorporate the Walnuts: Gently fold in the chopped walnuts, ensuring they're evenly distributed throughout the yogurt mixture.

      Melt the Coconut Oil: In a small microwave-safe bowl, melt the coconut oil until it's just liquid. Allow it to cool slightly before mixing.

        Form the Circles: Line a baking sheet with parchment paper. Use a round cookie cutter (about 2-3 inches in diameter) to create circles on the parchment. If you don't have a cookie cutter, you can use a spoon to form circles directly on the parchment paper.

          Fill with Yogurt Mixture: Scoop a generous tablespoon of the yogurt mixture into each circle. Use the back of the spoon to flatten and smooth the top, ensuring that the yogurt mixture is evenly spread within the circular shape.

            Freeze: Place the baking sheet in the freezer for about 4-6 hours, or until the yogurt circles are completely frozen.

              Serve and Garnish: Once frozen, pop the yogurt circles off the parchment paper. If desired, drizzle with a bit more maple syrup and top with a walnut half for garnish before serving.

                Store Leftovers: Store any remaining circles in an airtight container separated by parchment paper in the freezer for up to 2 weeks. Enjoy!
