2 cups plain Greek yogurt

½ cup maple syrup

1 tsp vanilla extract

1 ½ cups granola (store-bought or homemade)

½ cup mixed nuts (e.g., almonds, pecans, walnuts), roughly chopped

½ teaspoon ground cinnamon

Fresh berries (such as strawberries, blueberries, or raspberries) for topping

Cooking spray or parchment paper for lining

Instructions
 

Prepare the Pan: Line a 9x5-inch loaf pan with parchment paper, leaving some overhang for easy removal. If you prefer, you can also lightly grease the pan with cooking spray to prevent sticking.

    Mix Yogurt Base: In a large mixing bowl, combine the Greek yogurt, maple syrup, and vanilla extract. Stir until the mixture is smooth and well-combined.

      Fold in Granola: Gently fold in the granola, mixed nuts, and ground cinnamon into the yogurt mixture. Be careful not to break the granola clusters too much.

        Fill the Pan: Pour the yogurt and granola mixture into the prepared loaf pan. Use a spatula to spread it evenly and pack it down gently.

          Freeze: Place the pan in the freezer and let it freeze for at least 4-6 hours, or until the mixture is solid.

            Cut into Wedges: Once frozen, use the parchment paper to lift the block out of the loaf pan. Place it on a cutting board and cut it into wedges or bars.

              Serve: Top each wedge with fresh berries and an extra drizzle of maple syrup if desired. Serve immediately, or return the wedges to the freezer until ready to enjoy!

                Storage: Keep any leftover wedges in an airtight container in the freezer for up to 2 weeks. Enjoy them right from frozen!
