2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt (or dairy-free alternative)

1/2 cup coconut milk

1/4 cup honey (or maple syrup for a vegan option)

1 tsp ground cardamom

1/2 tsp vanilla extract

Pinch of salt

1/4 cup crushed pistachios (for topping)

1/4 cup shredded coconut (for topping)

Instructions
 

Prepare the Mangoes: In a blender, add the diced mangoes and blend until smooth. If you prefer some texture, reserve a few small pieces of mango and stir them back in after blending.

    Blend the Ingredients: Add the Greek yogurt, coconut milk, honey, ground cardamom, vanilla extract, and a pinch of salt to the blended mango. Blend all the ingredients together until you have a creamy and smooth mixture.

      Taste and Adjust: Taste the mixture and adjust the sweetness if needed by adding more honey or maple syrup, depending on your preference.

        Pour into Molds: Pour the mango yogurt mixture into silicone ice cube trays or mini muffin pans, filling each section about three-quarters full.
