1 cup coconut flour

1/2 cup unsweetened shredded coconut

1/2 cup butter, melted

1/4 cup honey or maple syrup

1/4 teaspoon salt

2 large eggs

1 cup plain yogurt (Greek or regular)

Zest of 1 lemon

1/2 cup fresh lemon juice (about 2-3 lemons)

1/4 cup sugar (adjust sweetness to taste)

Optional: Lemon slices and toasted coconut for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

    Prepare the Base: In a mixing bowl, combine the coconut flour, shredded coconut, melted butter, honey or maple syrup, and salt. Mix well until it comes together into a crumbly dough.

      Press the Mixture: Spread the coconut mixture evenly across the bottom of the prepared baking dish. Use a spatula or your fingertips to press it down firmly to form a crust.

        Bake the Crust: Bake the crust in the preheated oven for 10-12 minutes, or until it starts to become golden. Remove from the oven and set aside to cool slightly.

          Prepare the Filling: In another mixing bowl, whisk together the eggs, yogurt, lemon zest, lemon juice, and sugar until smooth and well combined. You can adjust the sugar amount based on your preference for sweetness.

            Pour the Filling: Pour the lemon yogurt filling over the cooled crust, spreading it out evenly.

              Bake Again: Return the baking dish to the oven and bake for an additional 20-25 minutes or until the filling is set and slightly firm in the center.
