Frozen Yogurt Blueberry Muffin Bites

1 cup all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup milk

1/4 cup melted coconut oil (or unsalted butter)

1 tsp vanilla extract

1 cup fresh or frozen blueberries

1 cup vanilla frozen yogurt

Optional: Zest of 1 lemon

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the Greek yogurt, milk, melted coconut oil, vanilla extract, and lemon zest (if using) until smooth.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Gently fold them together until just combined, being careful not to overmix.

          Add Blueberries: Gently fold in the blueberries to the muffin batter.

            Fill the Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

              Bake: Place the tin in the preheated oven and bake for 12-15 minutes or until the tops of the muffins are golden and a toothpick inserted in the center comes out clean.

                Cool: Once baked, remove the muffin bites from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
