Frozen Yogurt Berry Cheesecake Bites

1 cup Greek yogurt (plain or vanilla)

8 oz cream cheese, softened

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 cup fresh lemon juice

1 cup mixed berries (strawberries, blueberries, raspberries, or blackberries)

1/4 cup graham cracker crumbs

1 tablespoon coconut oil (melted, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Berry Mixture: In a small bowl, lightly mash the mixed berries with a fork to release their juices but leave some bits for texture. Set aside.

    Make The Creamy Base: In a medium mixing bowl, combine the softened cream cheese and Greek yogurt. Use a hand mixer or a whisk to blend until smooth and creamy.

      Sweeten It Up: Add honey or maple syrup, vanilla extract, and fresh lemon juice to the cream cheese mixture. Mix well until everything is well combined and creamy.

        Layer The Ingredients: Line a mini muffin tin with mini cupcake liners. Spoon a small amount of the cheesecake mixture into each liner, filling them about halfway. Press a few spoonfuls of the mashed berry mixture on top, then cover with more cheesecake mixture until almost full.

          Finish With Crust: In a separate small bowl, combine graham cracker crumbs with melted coconut oil (if using). Sprinkle the graham cracker mixture on top of each cheesecake bite for added texture and crunch.

            Freeze: Place the muffin tin in the freezer for about 4-6 hours or until the cheesecake bites are completely frozen.

              Serve: Once frozen, carefully remove the bites from the muffin tin and peel off the liners. Serve immediately or store in an airtight container in the freezer for up to a month. Garnish with a fresh mint leaf if desired.
