Ingredients

2 cups plain Greek yogurt (or your preferred yogurt)

2 tablespoons honey or maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)

1/4 cup granola (optional, for added crunch)

1/4 cup shredded coconut (optional, for garnish)

A pinch of sea salt (optional, to enhance flavor)

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir well until all ingredients are thoroughly mixed and smooth.

Line Your Baking Sheet: Line a baking sheet (about 9x13 inches) with parchment paper, ensuring it covers the entire bottom and extends slightly over the edges for easy removal.

Spread the Yogurt: Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it out evenly to your desired thickness, ideally about 1/2 inch thick.

Add Berries: Scatter the mixed berries evenly across the yogurt layer, pressing them slightly into the yogurt to ensure they stick once frozen.

Optional Toppings: If using granola, sprinkle it over the top for a crunchy texture. Add shredded coconut for a tropical touch if desired.

Freeze: Place the baking sheet in the freezer and freeze for at least 4-6 hours, or until the yogurt is completely solid.

Cut & Serve: Once frozen, remove the yogurt bark from the baking sheet using the parchment paper. Carefully cut it into pieces or break it into shards.

Storage: Store any leftover bark pieces in an airtight container in the freezer for up to two weeks. Enjoy straight from the freezer!
