Frozen Strawberry Shortcake Bars

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar (divided)

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 1/2 cups graham cracker crumbs (about 10 full sheets)

1/2 cup unsalted butter, melted

1 cup plain Greek yogurt (or cream cheese for a richer flavor)

Instructions
 

Prepare the Strawberries: In a bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar. Set aside for about 15-20 minutes to macerate, allowing the strawberries to soften and release their juices.

    Make the Graham Cracker Base: In a medium bowl, mix together the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar until well combined. Press the mixture firmly into the bottom of an 8x8 inch baking dish to create an even layer. Place in the freezer while you prepare the filling.

      Whip the Cream: In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

        Combine with Yogurt: In another bowl, mix the Greek yogurt with the remaining 2 tablespoons of sugar until smooth. Gently fold the whipped cream into the yogurt mixture until fully combined.

          Layer the Mixture: Remove the graham cracker crust from the freezer. Spread half of the yogurt cream mixture evenly over the crust. Layer half of the macerated strawberries on top, then repeat with the remaining yogurt mixture and strawberries.

            Freeze: Smooth the top with a spatula and cover tightly with plastic wrap. Freeze for at least 4 hours, or until fully set.

              Slice and Serve: Once frozen, remove from the freezer and let sit at room temperature for about 5 minutes to soften slightly. Lift the bars out using the edges of the parchment paper (if used) and cut into squares. Serve immediately, and enjoy the refreshing taste of summer!
