Ingredients

1 cup fresh strawberries, hulled and quartered

1 ½ cups cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

½ teaspoon lemon zest

Pinch of salt

Extra strawberries for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Mix well until the crumbs are fully coated and resemble wet sand.

Shape the Base: Line a baking sheet with parchment paper. Use a tablespoon to scoop out the graham cracker mixture and press it into flat, coin-shaped bites (about 1 ½ inches in diameter) on the prepared sheet. Leave some space between each bite. Place the baking sheet in the freezer for at least 15 minutes to set.

Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, continuing to beat. Then mix in the vanilla extract and lemon zest until well combined.

Add Strawberry: Gently fold the quartered strawberries into the cream cheese mixture. Ensure they are evenly distributed throughout the filling.

Assemble the Coin Bites: Remove the crust base from the freezer. Using a small spoon or piping bag, dollop or pipe the cheesecake filling onto each graham cracker coin. Top each coin with a small slice of strawberry if desired.

Freeze Until Set: Place the baking sheet back in the freezer and freeze the bites for at least 2-3 hours or until they are firm and set completely.

Serve: Once frozen, remove the bites from the parchment paper and serve immediately or store in an airtight container in the freezer for up to a month. Enjoy your refreshing frozen treats!
