2 cups fresh strawberries, hulled and sliced

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust to taste)

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1/4 cup crushed graham crackers (optional, for crust)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Strawberries: In a blender or food processor, add the sliced strawberries and blend until smooth. You can leave some small chunks for texture if you prefer.

    Mix the Mixture: In a large mixing bowl, combine the blended strawberries, Greek yogurt, honey (or maple syrup), lemon juice, and vanilla extract. Stir well until everything is well incorporated.

      Add the Optional Crust: If you’re using crushed graham crackers, mix them into the strawberry-yogurt mixture. This will give your bars a delicious base.

        Pour into Molds: Pour the mixture evenly into a silicone mold or a lined baking dish. Use a spatula to smooth out the top if needed.

          Freeze: Place the mold/dish in the freezer and let it freeze for at least 4-6 hours, or until completely solid.

            Remove and Slice: Once frozen solid, remove the bars from the mold. If using a baking dish, let it sit at room temperature for a few minutes to soften slightly, making it easier to slice.
