1 ½ cups fresh raspberries

1 cup unsweetened shredded coconut

1 cup coconut cream (chilled)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

¼ teaspoon sea salt

½ cup dark chocolate chips (for drizzling, optional)

Instructions
 

Prepare the Coconut Mixture: In a mixing bowl, combine the chilled coconut cream, shredded coconut, maple syrup, vanilla extract, and sea salt. Stir well until everything is evenly mixed.

    Blend the Raspberries: In a separate bowl, gently mash the fresh raspberries with a fork until they’re mostly crushed but still have some small chunks for added texture.

      Combine Ingredients: Gently fold the mashed raspberries into the coconut mixture. Be careful to maintain some of the raspberry pieces for flavor bursts in each bite.

        Mold the Bites: Line a mini muffin tin or silicone mold with parchment paper. Spoon the raspberry-coconut mixture into the molds, filling them about three-quarters full.

          Freeze: Place the muffin tin in the freezer and let the mixture set for at least 2-3 hours or until fully frozen.
