1 cup coconut milk (full-fat for creaminess)

1 ripe banana, sliced and frozen

1/2 cup Greek yogurt (optional for extra creaminess)

1 tablespoon honey or maple syrup (adjust to taste)

1/4 teaspoon vanilla extract

1/4 cup shredded unsweetened coconut (for topping)

1/2 cup granola (for topping)

Fresh fruit slices (like banana, kiwi, or strawberries for topping)

Chia seeds or hemp seeds (for garnish)

Instructions
 

In a blender, combine the frozen pineapple, coconut milk, frozen banana, Greek yogurt, honey (or maple syrup), and vanilla extract.

    Blend on high until the mixture is smooth and creamy. You may need to stop and scrape down the sides of the blender a few times to ensure everything is well mixed.

      If the mixture is too thick, add a bit more coconut milk, one tablespoon at a time, until you reach your desired consistency.
