Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 (14 oz) can sweetened condensed milk

½ cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

1/2 cup heavy whipping cream

1 tablespoon powdered sugar

Lemon slices and zest for garnish (optional)

Instructions

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until all crumbs are evenly coated. Press the mixture into the bottom of a 9x9 inch baking dish to form a firm crust. Refrigerate while preparing the filling.

Make the filling: In another bowl, whisk together the sweetened condensed milk, fresh lemon juice, and lemon zest until smooth and well combined.

Whip the cream: In a separate bowl, beat the heavy whipping cream and powdered sugar with an electric mixer on high speed until stiff peaks form. Gently fold the whipped cream into the lemon mixture until no white streaks remain.

Combine and pour: Pour the lemon filling over the chilled graham cracker crust, spreading it evenly with a spatula.

Freeze: Cover the baking dish with plastic wrap and freeze for at least 4 hours, or until the filling is completely set.

Slice and serve: Once frozen, remove from the freezer and cut into bars. Let them sit at room temperature for about 5-10 minutes before serving for easier slicing. Garnish with lemon slices and zest if desired.
