Frozen Lemon Raspberry Swirl Bars

For the crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the filling:

1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

1 cup granulated sugar

2 large eggs

1/2 cup heavy cream

For the raspberry swirl:

1 cup fresh raspberries

1/4 cup powdered sugar

1 tablespoon lemon juice

Instructions
 

Prepare the crust:

    Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press this mixture evenly into the bottom of a greased 9x9 inch baking pan. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.

      Make the raspberry swirl:

        In a blender or food processor, combine the fresh raspberries, powdered sugar, and lemon juice. Blend until smooth. Strain the mixture through a fine mesh sieve to remove the seeds, if desired. Set aside.

          Prepare the filling:

            In a large bowl, whisk together the lemon juice, lemon zest, sugar, and eggs until smooth. Add the heavy cream and mix until fully combined.

              Assemble the bars:

                Pour the lemon filling over the cooled crust. Using a spoon or knife, drop small dollops of the raspberry puree over the lemon filling. Using a skewer or a knife, gently swirl the raspberry puree into the lemon filling to create a marbled effect.

                  Freeze the bars:

                    Place the baking pan in the freezer and let it freeze for at least 4 hours or until completely firm.

                      Cut and serve:

                        Once frozen, remove the bars from the pan by lifting the parchment paper (if used). Use a sharp knife to cut into squares. Let sit at room temperature for a few minutes before serving for easier slicing.
