Ingredients

2 ripe pineapples

2 cups coconut milk (canned, full-fat for creaminess)

1/3 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 cup shredded coconut (unsweetened, for garnish)

Fresh mint leaves (for garnish)

Pinch of salt

Instructions

Prepare the Pineapples: Cut the tops off the pineapples and hollow them out using a sharp knife and a spoon, leaving about half an inch of fruit on the sides. Set the hollowed shells aside.

Blend the Filling: In a blender, combine the coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Mix in Pineapple: Chop the leftover pineapple fruit into small chunks and stir them into the coconut mixture.

Fill the Cups: Carefully pour the coconut-pineapple mixture into each hollowed-out pineapple cup, filling them to the brim.

Freeze: Place the filled pineapple cups upright in the freezer. Freeze for at least 4 hours or until completely solid.

Serve: Once frozen, remove from the freezer and let sit for a couple of minutes to soften slightly. Use a sharp knife or ice cream scoop to serve out portions. Garnish with shredded coconut and fresh mint leaves.

Enjoy: Serve the frozen cups as a refreshing dessert at a tropical-themed party or simply enjoy them as a sweet escape!
