2 ripe bananas

1 cup coconut yogurt (dairy-free, if preferred)

1/2 cup coconut milk (canned or carton)

1 tablespoon honey or maple syrup (adjust based on sweetness preference)

1/2 teaspoon vanilla extract

1/4 cup shredded coconut (unsweetened, for garnish)

1/4 cup chopped fresh fruit (e.g., mango, kiwi, or strawberries, optional)

Instructions
 

Blend the Base: In a blender, combine the ripe bananas, coconut yogurt, coconut milk, honey (or maple syrup), and vanilla extract. Blend until smooth and creamy, ensuring there are no lumps from the bananas.

    Mix in Chunks: If using chopped fresh fruit, fold it into the banana-yogurt mixture gently with a spatula.

      Prepare the Molds: Lightly coat your popsicle molds with a bit of coconut oil for easy removal. Pour the blended mixture evenly into each mold, leaving a little space at the top.

        Add Coconut Garnish: Sprinkle a little shredded coconut on top of each mold. This adds a lovely texture and flavor once frozen.

          Insert Sticks: If your molds come with lids and sticks, insert the sticks now. If not, place toothpicks in the center of each mold, making sure they reach down into the mixture.
