Ingredients

2 large ripe bananas

8 oz (226g) dark chocolate (at least 70% cocoa), chopped

1 tablespoon coconut oil

1/2 teaspoon vanilla extract

1/4 cup chopped nuts (walnuts, almonds, or pecans)

1/4 cup shredded coconut (unsweetened)

Pinch of sea salt

Optional toppings: freeze-dried berries, mini chocolate chips, or drizzled white chocolate

Instructions

Prepare the Bananas: Peel the bananas and slice them into 1/4-inch thick rounds. Place them on a parchment-lined baking sheet, arranging them in a single layer. Freeze for about 30 minutes until firm.

Melt the Chocolate: In a microwave-safe bowl, combine the chopped dark chocolate and coconut oil. Heat in 30-second intervals, stirring between each, until fully melted and smooth. Stir in the vanilla extract for added flavor.

Coat the Bananas: Once the banana slices are frozen, remove them from the freezer. Dip each slice into the melted chocolate, using a fork to let the excess drip off, then place them back on the lined baking sheet.

Add Toppings: Immediately sprinkle the chopped nuts, shredded coconut, and a pinch of sea salt over the chocolate-covered bananas. If desired, add any optional toppings like freeze-dried berries or mini chocolate chips for extra flair.

Freeze the Bark: Place the baking sheet in the freezer for about 1-2 hours, or until the chocolate is fully set.

Break into Bark: Once solid, remove the chocolate banana bark from the freezer. Using your hands or a sharp knife, break it into pieces.

Serve & Store: Enjoy immediately or store the bark in an airtight container in the freezer for up to one month.
