2 cups frozen blueberries

1 cup coconut cream (chilled)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup almond flour

1/2 cup shredded unsweetened coconut

1/4 teaspoon salt

1 tablespoon coconut oil (melted)

Fresh blueberries and mint leaves for garnish (optional)

Prepare the Base: In a mixing bowl, combine almond flour, shredded coconut, and salt. Mix well, then stir in melted coconut oil until the mixture is crumbly yet holds together when pressed.

    Line the Pan: Line a 9x9-inch square baking dish with parchment paper for easy removal. Press the almond flour mixture evenly into the bottom of the dish to form a base layer. Use a spatula or your fingers to pack it down firmly.

      Make the Blueberry Layer: In a blender or food processor, add the frozen blueberries, coconut cream, honey (or maple syrup), and vanilla extract. Blend until smooth and creamy.
